Recipe for Turkish 'Menemen'
Ingredients:
500 grams of tomatoes
2 green peppers
1 red pepper
1 onion
1 cup of canned tomatoes
1 tablespoon of olive oil
2 eggs
1 bowl of cheddar cheese
Salt, black pepper, cumin, and
paprika powder to taste
Instructions:
1. Heat the olive oil in a large frying pan over medium heat. Add the diced onion and sauté for 2-3 minutes until softened.
2. Add the diced green peppers and red pepper and cook for an additional 2-3 minutes until softened.
3. Add the diced tomatoes, canned tomatoes, salt, black pepper, cumin, and paprika powder. Stir to combine and bring to a simmer.
4. Cook for 10-15 minutes until the tomatoes have broken down and the sauce has thickened.
5. Crack the eggs and add into the pan and stir gently to break up the yolks and whites. Cook for 2-3 minutes until the eggs are set to your liking.
6. Sprinkle the grated cheddar cheese over the top and cover the pan. Cook for an additional 2-3 minutes until the cheese is melted.
