Heat 1 tablespoon of oil in a pan over medium heat. Add the onions and sauté until they become translucent. Add the potatoes, tomatoes, chili pepper, and mushrooms to the pan. Cook for a few minutes until the vegetables start to soften. 2. Season the vegetable mixture with salt, pepper, cumin, red pepper, and thyme to taste. Stir well to combine the flavors. 3. Prepare the chicken thighs by carefully removing the bones and opening them up. 4. In a bowl, mix together the tomato paste, 1 tablespoon of oil, and your desired amount of salt, pepper, cumin, red pepper, and thyme. This will be the marinade for the chicken. 5. Rub the marinade mixture all over the chicken thighs, making sure to coat them evenly. Let the chicken marinate for at least 30 minutes to allow the flavors to penetrate. 6. Lay the marinated chicken thighs flat on a clean surface. Place a spoonful of the vegetable mixture onto each chicken thigh and spread it evenly. 7. Carefully roll up the chicken thighs, enclosing the filling inside. Secure each roll with toothpicks or kitchen twine to hold them together. 8.
