One of our favourite recipes at Drogo’s Kitchen is the Fenugreek cake, or traditionally regarded as a Helba recipe in the Middle East. Helba is basically the Arabic term for fenugreek, and can be interchanged accordingly. This Middle Eastern dessert is essentially a delightful semolina cake, sweetened with maple syrup and topped with roasted almonds. This fenugreek semolina cake is similar to the consistency of the namura or basbousa desserts that are also widely popularized Middle Eastern desserts. With the use of semolina in the dessert, the fenugreek cake is seemingly more dense moist in texture, and making it more enjoyable with a hot cup of tea or coffee on the side. Just a tip though, remember to pour the syrup while it’s hot when adding it to the fenugreek cake to ensure a well absorbed semolina cake! Another great element to this helba recipe is that, it is essentially a vegan cake. So it’s an awesome dessert to have around a diverse selection of family and friends. In addition, with fenugreek as the main ingredient, this helba recipe includes a wide range of healthy benefits, such as decreased blood sugar levels and reduction in inflammation and cholesterol levels. As a Middle Eastern dessert, the fenugreek ingredient in the cake also facilitates milk production in breastfeeding mothers, making this an excellent lactation recipe to share with expecting, new, or lactating mothers. Most lactation recipes are usually in the form of cookies or tea, so a fenugreek cake is not only more celebratory as a cake, but it is just more exciting for all the mothers who are also cake lovers out there.
