Chicken Baked Tacos

This is a good recipe because you can plunk a bunch of ready made tacos in front of a group of people and they can dig in! You could set the fillings out on a table and let people just fill their own of course :) 12 taco shells (baked for 5-6 minutes at 400 F until crispy) 1 can refried beans 2 cups shredded cheese (kind is your choice, I used Nacho blend). 1 tbsp vegetable oil 1 medium sized onion chopped 1 tbsp cumin 1/2 tsp salt 1/2 ground pepper 1 cup salsa 1 oz can of green chillies 3 cups cooked shredded chicken In a large skillet, heat the vegetable oil until hot, add chopped onion and cook until the onions are translucent. Stir in the remainder of the ingredients (except for refried beans and cheese). Heat over medium heat until hot. Put some refried beans in the bottom of each shell, top with taco chicken mixture. Place in a 9x13" baking dish, making sure they stand up (use balled up foil if necessary to fill in empty space). Sprinkle with your choice of cheese. Bake at 400F until cheese melts.
