In-depth: The Suehiro Cerax 800 Waterstone

The #800 cerax waterstone is often overlooked in favour of it's brilliant #1000 grit sibling, but Suehiro has been very smart in the development of this stone and differentiated it greatly from the next-door neighbour #1000. The #800 is much harder than the #1000, comparable in hardness to the #6000 grit stone much higher up in the grit rating, and noticeably coarser than the #1000 without hitting the absurd levels of aggression of the #320. The #800 will work faster and stay flatter than the #1000, but with less opportunity to jump straight up into the higher grits. A move up to the #3000 is manageable here, but probably not higher. The other area the #800 shines is as a stepping stone above the #320 cerax. It is excellent at removing the heavy scratch patterns left by the #320, and will make the time spent on the #1000 stone much easier.
