💥 Ingredients List:💥
Pan Fried Tilapia:
4 (4oz) Tilapia Fillets
season fillets with salt/pepper before flour bath
1/2c AP flour
1 tbsp Ancho Chile - Spanglish Asadero
Salt+Pepper to taste
2 tbsp Olive Oil
Mango Avocado Salsa:
1 diced mango
3/4c diced bell pepper
1/4c cilantro
1/3c diced red onion
2 diced avocado
1 Tbsp lime juice
1 Tbsp olive oil
Salt+Pepper, to taste
(add jalapeño, diced for more spice)
Coconut Rice:
1 1/2 cups Coconut Water (or veggie stock)
1 1/4 c canned coconut milk
1 1/2 c jasmine rice, rinsed well and drained well
1 tsp salt
