I hope you enjoy this video :) INGREDIENTS To Marinate the Wings 2 lbs, Chicken Wings 1 tbsp, Canola Oil 1 tsp, Kosher Salt 1/2 tsp, Black Pepper 1 tsp, Smoked Paprika For the Barbecue Sauce 1 cup, Ketchup 2 tsp, Hot Sauce (I used Tabasco but you can use your favourite) 1 tsp, Worcestershire sauce 1/4 cup, Balsamic Vinegar 1/4 cup, Brown Sugar 1 tsp, Smoked Paprika 1/2 tsp, Cayenne Chilli Powder 1/2 tsp, Garlic Powder 1/2 tsp, Onion Powder 1 tsp, Instant Coffee Salt and Pepper to taste For the Creamy Parmesan Garlic Dipping Sauce 1/2 cup, Plain Yogurt 1/2 cup, Mayonnaise 1/2 cup, Grated Parmigiano Reggiano 1 clove of Garlic, finely grated Salt and Pepper to taste METHOD Preheat oven to 400F on Convection Bake. In a large bowl mix wings together with all ingredients for marination (oil, salt and pepper, smoked paprika) until evenly coated. Line a baking tray with parchment paper and arrange wings ensuring not to crowd the pan. Use a second baking sheet if you don't have enough space on the first. Bake wings for 35 minutes, turning once half way through baking to ensure the wings get browned on all sides. Combine all ingredients for barbecue sauce in a small saucepan and cook for 5 minutes on medium heat stirring consistently, until a rich dark sauce forms. Remove from heat. Place baked wings in a large bowl, top with barbecue sauce, and toss to coat. Line a baking sheet with parchment paper, and arrange sauced wings on top in one even layer. Bake for an additional 10-12 minutes or until the wings have slightly darkened and begin to crackle. Stir all ingredients for creamy parmesan garlic dipping sauce in a bowl and hold in fridge until ready to serve. Remove wings from the oven, arrange on a platter, and serve alongside dipping sauce.
