Learn Filipino Pork Adobo in less than 10 minutes

Ingredients: 1 kg pork belly or pork shoulder (you can do combination) 1 medium-sized red onion 5 big cloves of garlic 2 bay leaf 1 mild green chili (optional) 4 tablespoons regular soy sauce 3 tablespoons white vinegar salt and pepper to taste HOW TO: 1. On your skillet ,add a little bit of oil and pan fry some of the pork fat for added grease. (if you do not want excessive grease, skip the pork fat,just add a little bit more oil. 2. Let the fat from the pork render out (about 7-10 mins), then add your onion and garlic. Sautee until onion become transparent. 3. IMPORTANT: (forgot to film), add the soy sauce and continue frying on medium heat until you see browning, almost burnt-like gravy at the bottom. 4. Deglaze your skillet with boiling water enough to cover the meat. 5. Cover your skillet , reduce the heat to low then simmer for 25 minutes. 6. Remove cover then seperate the sauce and the meat using sift or strainer, be very careful. 7. Place the meat back into the skillet and let the more fat render out, if you are using leaner meat, you may need to add a little vegetable oil. 8 Fry until the meat is golden brown on medium -high heat 9. Add the sauce back into your skillet 10. Add the vinegar and DO NOT STIR!!! Let the adobo cook off the acid for at least 5 mins on high heat 11. After 5 mins, stir, add salt and pepper (or as needed). Reduce the sauce or as desired.. Then be ready to serve!
